Green Cooking with a Hot Box
To make your own Hot Box you will need:
Cardboard box that is big enough
A cooking pot that has a securely fitting lid
1 duvet (or other insulating materials such as newspapers etc.)
Line your box out with your duvet, with enough ‘overhang’ to cover the pot eventually. The idea is to have a very snug fit once the put is in too, thus ensure that your box and duvet sizes will be big/small enough to be a tight-fit once the pot is in.
Add all the ingredients in your pot as you normally would (such as rice, water and spices, lentils and veggies) and briefly bring to the boil on the electric/gas stove.
Place the lid on securely and put the pot inside the box, on top of the duvet. Cover the pot with the remaining duvet and close the box with its own lid.
The result is exactly the same as with a slow cooker. You will come home after work tonight and find a delicious ‘green’ meal waiting for you, cooked non-aggressively.
